This pilot kit is where new recipes are tried and tested. Part inspiration, part fermentation this is the hub of 40FT research and development.
Brews from this kit make their debut on the test taps in the 40FT tap-room. Experimental brews are reviewed by beer aficionados and thirsty friends alike. Each drinker is entitled to an opinion. Ultimately, the best brews make the cut for production on the full scale kit. Deep (stout) and Street Weiss (white beer) all started life in the pilot kit and are now regulars in the taproom.
Once the sugars are extracted from the malted barley, the grain is spent and is used for compost or animal feed.

Ben, a half-Rhinelander, half-Scouse brewmaster must be one of the most relentlessly positive people in the British brewing industry.With an impressive Brewing CV, he never thought life would lead him to brewing beer out of shipping containers in the back streets of Dalston. But there you have it, once again, the mysteries and magical allure of the amber ale. He maintains that there have been no pitfalls in operating a brewery from shipping containers, but concedes that space limitations keep the young brewery on their toes, “it keeps us trying to optimise space as much as possible; kegs becoming chairs or tables”.
